Maybe not all: the list of Christmas fayre compiled by the popular 16 th century English poet and farmer Thomas Tusser was fairly comprehensive. But the chances are, it's more than seemed likely just a few years ago. Meat has come back to our tables in a big way. When Henry Dimbleby published the first part of his National Food Strategy in 2020, it didn't look so rosy. Daily meat consumption had been falling for a decade, down some 17pc, with consumers not only eating less, but also switching from red to white. Dimbleby was seeking, The Times approvingly purred, to “rewrite the British diet”. We must consume a third less meat by 2030, he urged, if not for the planet, then for our own good. But today, Dimbleby's reports now look like the zenith of pious food authoritarianism. This year, the value of meat sales soared again, continuing the post-2021 trend.
