John Montgomery has taken the helm of Salad Collective, the Golden, Colorado-based company that is parent to Mad Greens, as well as Snappy Salads and Tokyo Joe's. The collective operates 60 restaurants across Colorado, Texas and Arizona. Montgomery succeeds Darden Coors in the CEO suite. Coors is moving to the role of chairman of the board for Salad Collective and will remain engaged in long-term vision for the brands and growth, while working on AC Development initiatives, including Clayworks, the Coors family's mixed-use district in downtown Golden. For Montgomery, it's a homecoming of sorts. Montgomery first joined Mad Greens in 2008—just four years after it was founded in 2004— and served as president of the brand from 2016 to 2022. Most recently, he was president and chief financial officer of Illegal Pete's, which is also based in Colorado.
