Herbs are grown with intention. Plates are designed to be just as beautiful as they are flavorful. But for Chef Jenny Castor, the woman behind Luckybee Kitchen, this story didn't start in a kitchen. It started during one of the hardest chapters of her life. More than a decade ago, Castor faced a health struggle that left her physically and emotionally drained. "The big thing was I just couldn't get out of bed, I'd get my kids to school, then have to stay in bed all day," she said. Castor recalled telling her husband, "I said, if I ever get well, if I ever get through this, I want to learn to cook so that you guys never have to eat takeout again." At the time, cooking wasn't even part of her routine. Everything changed one Christmas morning. One by one, her children handed her gifts: first a chef's hat, then checkered pants, then an apron – each piece slowly forming a puzzle she didn't yet understand.
