When Liz Williams was named chief executive officer of El Pollo Loco in early 2024 , one of her strategic pillars was to focus on new unit growth with a goal of eventually becoming a national brand. It's an ambitious goal, to be sure — the chain has been around for 50 years and has hovered between 400 and 500 units for the past 10 of them, largely in its home market of California and surrounding states. Williams, an industry veteran who cut her teeth at Taco Bell, knows the quickest path to new unit growth is to bolster unit economics and make the brand an attractive proposition for franchisees. As such, restaurant margin improvement has been a priority since she joined the brand and the chain has made tremendous progress toward this goal. In 2022, margins were 13.2%. In the third quarter of 2025, they were 18.3%. The company is expecting margins of 17.5% to 17.75% for the full year, and 18%-plus next year and beyond.
