Chef Makato Okuwa will introduce Suzu , a 6,000-square-foot Japanese restaurant with seating for more than 200 guests. Okuwa is a protege of Iron Chef Masaharu Morimoto and served as the head sushi chef at Morimoto's flagship restaurants in Philadelphia and New York. The restaurant will be part of Madison Square, a mixed-used development just off Red Bank Road in the front yard of the Medpace medical campus. According to one of his restaurant's websites , the chef's introduction to cooking took place in his hometown of Nagoya, Japan. At 15, he began an apprenticeship with master sushi chef Shinichi Takegasa. During the past 30 years, Okuwa has opened his own restaurants in Washington D.C., Miami and Mexico City, among other cities, and is known for his appearances on "Iron Chef America."
