By Akiko Katayama Once upon a time, Japanese sake was presumed to be a source of bad hangover in the US. (Predictably heating up low-quality alcohol would cause the harm.) But things are dramatically different nowadays. You can find a whole variety of premium craft sake in the US. Behind the change is the popularity of Japanese cuisine and sake producers’ efforts to export sake abroad. In 2019, the US was the biggest importer of Japanese sake both in quantity and value (26% and 29% of the total sake export from Japan respectively). As the sake market grows in the US, the number of sake breweries is increasing domestically. Currently there are approximately 20 breweries that make craft sake in the US.
