One of the biggest topics of conversation during last week's Restaurant Finance and Development Conference was the cost of beef. And for good reason. Costs of the commodity have reached all-time highs this year. They're about 15% higher than 2024 and some cuts are continuing to rise. MarginEdge data shows the median price of beef chuck is up nearly 6.5% since October, for instance, while beef rib eye is up 7% month-over-month, and beef roast is up 2.11%. MarginEdge chief executive officer and co-founder Bo Davis said the timing of this inflation is especially painful. “(The holidays) is when operators want to showcase their best dishes — steaks, roasts, and other items that draw guests in for celebrations — and now those same cuts are the ones spiking by 10, 20, or even 25%.
