During the first half of the 19th century rye was the principal cereal grain grown in the United States. The lack of cold hardy corn varieties meant that, unlike today, corn did not flourish north of the Mason-Dixon line. Rye was hardier and grew faster. By the early 19th century farmhouse stills were as common as baking ovens. According to the late David Pickerell, by 1840 there were between 14,000 and 20,000 grain distillers in the United States, most of them producing rye whiskey. From the end of the Revolutionary War to the beginning of Prohibition in 1919, rye whiskey was the principal style of whiskey consumed in America. Rye was produced in two principal styles.
